Right now, even though you set a time frame for a test/activity...students are still able to access them outside of those hours. You have to assign the activity and then go to Google Classroom and remove students who are absent. Also, because of this, you're not able to set up assignments at home for students for the next day because as soon as you set them up, students can access the assignment regardless of what hours you set.
It would be useful to be able to lock assingments as well so that students know which ones they can and cannot still turn in late.
This workaround does partially work with Google Classroom, and effectively it will prevent access which is the requested enhancement here. Once the assignment is hidden in Realize it will not be visible to students there until it is unhidden. Since assignments are synchronized to Google they will have their own record there so it will remain and be visible. Students can attempt to open and access that assignment from there and then when taken into Realize they will see a message (Sorry, the item is not available to you) as the assignment is hidden in Realize so they will not have access. Once unhidden they can open it again from Google Classroom or Realize it will allow access to the assignment once more.

One way to get around it for now is by using the "hide" button at the end of the hour, and then students can not get back into it until you "unhide" it. I'm not sure if that works in conjunction with Google Classroom though.
