For demographics adding race of two or more and also for gender adding non-binary

When looking at student data it is important to be able to dig down into which students are doing well and struggling so we are uploading our demographics. Unfortunately for race there is not the option of 2 or more, just 1 single race. For gender there is not a non-binary option.
