Mark assignments as complete if done offline

Some students forget their Chromebook or charger, and their device is dead, so they cannot complete assignments online. I will give them a paper copy to complete the activity instead. I'd like the ability to mark a student as "completed offline" so their assignment doesn't show up as "late" when they log onto their device the next time we use it in class.
